A newly discovered (and now family favorite) food in our house is the purple potato! I didn’t even know there was such a food, but turns out there is! And they are delicious. We’re big potato eaters in our house and these have such a fantastic flavor.
But their flavor isn’t the only reason to devour these purple goodies. When I was in the kitchen preparing them, Scott was doing his homework to figure out the nutritional differences between white and purple potatoes. It turns out that unlike the white potatoes, purple potatoes are extremely rich in antioxidants–the same antioxidants that are found in berries. So, eat up! These flavorful taters are super good for your body! We saved two that we are going to quarter and plant, which will hopefully mean 8 purple potato plants in our garden!
