My kids are very good eaters. I can’t complain about that at all. They’ll eat just about anything that’s good for them. Probably because we make sure to feed them good-for-you foods. We figured early on that if you allow them to eat the garbage, that’s what they’ll demand. If they refuse to eat something that we make for them, they’ll eventually eat it if they’re hungry enough. And that seems to have led us to great eating habits. Lately I’ve been trying to get some more of the super foods in them. In our produce basket, sometimes we get kale. Kale is jam packed full of wonderful vitamins that I would love to pump into the kids. I had been told about kale chips and I decided to start there. I got some pretty good reviews on them from the girls, so I thought I’d share the recipe.
Preheat the oven to 350 F.
Drizzle olive oil all over the kale and salt it if you desire.
Place in the oven on the top rack to bake. Keep checking on it frequently. If it browns it won’t be as yummy. You want it to be crispy, but not brown. I usually pull it out after 7 min and weed out the ones that are done and then put the rest back in for a few more minutes.
