{Recipe} Mexican Rice Bowl

One of our family favorite dinners is Mexican Rice Bowl.  It is so yummy!  Everyone loves it and they request it often.  I’m always happy when I get cheers around the dinner table and when bellies are full.  A full belly=a happy baby.

And, it’s really simple to make.


  • 1 pound of ground beef seasoned with taco seasoning
  • cheddar cheese
  • 1 can of corn
  • 2 cups of rice
  • sour cream
  • chives
  • tomatoes and lettuce are great too, but I didn’t add them this time

The girls got to assemble their own rice bowls tonight, which they loved.  We hadn’t done it this way in a while and it went over pretty well.8761496_orig3011127_orig

Her distress seemed to be due to something on the platter, but she didn’t want anything she was offered. 😦3917039_orig4722297_origOh well.  It was a nice dinner anyway.  And Willow was fine after a few minutes sorting through her feelings in her room.  Then it turned out she did want all the things she was offered.  She just likes to change her mind all the time…such a girl.  😉3393098_orig
